Aam ki Launji!

Aam Ki Launji is a simple and easy finger licking pickle made from fresh raw mangoes. 

Popular pickle in Northern India and is a must-try when mangoes are in season. You can store this in an airtight container in the fridge. Enjoy with parantha or chappati when you don't have any sabzi.


Ingredients -

  • 500 grams Raw Mango (peeled and diced chopped)
  • 1/4 cup Jaggery 
  • t tbsp Vegetable oil/Mustard Oil
  • 1/2 teaspoon Red chili powder 
  • 3/2 tsp Salt
  • 1/2 tsp Hing
  • 1/2 tsp Fenugreek seeds 
  • 1 tsp Fennel seeds 
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder 
  • 1tsp Black Salt
  • 1/2 tsp Garam masala

Directions-

  • Wash and wipe the mango, cut into dice, and keep aside. 

  • Heat a pan with oil, to this add the fenugreek seeds, fennel seeds and saute them.

  • Add hing and turmeric powder. 

  • Now add the raw mango pieces and give it a stir. 

  • Add about three fourth cup of water, salt, black salt, and red chili powder to this mixture.

  • Add the jaggery, cumin powder, and garam masala and stir to combine.

  • Cover and cook for about 25-30 minutes on medium flame until it has softened. 

  • Cook until the jaggery has completely melted and the mixture has thickened. 

  • Off the flame and allow it to come to room temperature.

  • Serve this with Paratha and a cup Chai.

Note: You can refrigerate the Aam Ki Launji Pickle in a glass jar for about 15 days.
