Panjiri | Dry fruits Barfi | Meva Paag | Gond Panjiri

Panjiri | Dry Fruit Barfi, one of my favorite sweets during Janmashtmi. Treat your friends and family members with the divine taste and amazing flavor of this ultra-delicious barfi. This is a recipe given to me by my mom. Sharing the recipe and tips of my mom here๐Ÿ˜Š๐Ÿ˜Š


Ingredients:

  1. 1 cup grated dry coconut
  2. 3 tbsp Gond/edible gum
  3. 1/2 cup chopped Almonds/Cashews
  4. 1/3 cup  melon seeds
  5. 1 cup chopped Makhane/lotus seeds
  6. 1 cup Sugar
  7. 1/2 cup Water
  8. 1 tsp  cardamom powder
  9. 2 tbsp desi ghee for frying

How to make Panjiri?

  1. Grease the tray & keep aside.
  2. Fry gond in ghee, in small batches. I generally powdered the gond and then fry.
  3. It will fluff & become almost transparent when it is done.
  4. Fry makhanas till crisp on slow heat, keep aside.
  5. Dry roast the melon seeds.
  6. Chop the almonds/ & dry roast them.
  7. Roast the dry coconut.
  8. Take a pan and add water, sugar & cardamom powder & cook till it reaches one string consistency.
  9. Turn off the heat & mix all the dry fruits in it & transfer quickly to the greased tray.
  10. Cool it & cut into square/diamond shape pieces.
  11. Enjoy. 
Tips: 
  • After putting the mixture on the plate, do not touch it by hand at all. By doing this the Panjiri becomes white in color. So, spread the mixture on the whole plate by spatula.
  • If the sugar syrup looks thin after adding the sugar syrup, immediately fry and grind some Makhane, add it in the mixture and it will thicken.
  • And if the mixture becomes too thick, then add 2 to 3 tablespoons of water.
  • While removing the pieces, heat the plate a little bit below. The pieces of Panjiri will be removed easily.
